The basics of dairy processing:

  1. Collection of milk:

The first major step in ensuring high-quality dairy products is to collect fresh milk from cows, sheep, or goats. After gathering the raw milk, it is transported to processing facilities where it undergoes a series of quality assessments to ensure compliance with established safety and sanitation standards.

  1. Pasteurization:

The initial crucial phase in the processing of raw milk is thermal treatment. During this process, milk is gently heated to eliminate harmful bacteria while preserving its nutritional integrity. This step ensures that the milk reaching consumers is safe for consumption.

  1. Separation:

Following heat treatment, the milk is separated into cream, which naturally rises to the surface, and skim milk, which remains below. Both components are used to make various dairy products.

  1. Homogenization:

Homogenization is a crucial step in the process that prevents the separation of cream and skim milk, as observed in raw milk. This process utilizes high-pressure pumps to disrupt fat globules, resulting in a consistent and stable texture throughout the milk.

  1.  Packaging:

Once the milk has undergone the above processes, it is packaged into containers suitable for distribution to consumers, ensuring its freshness and safety until it reaches the end user.
