A large number of coconut products are manufactured all over the globe. In India, major coconut products include tender coconut water, coconut milk, coconut cream, coconut oil, virgin coconut oil, desiccated coconut powder, spray-dried coconut powder, Nata de coco& Coconut Neera, etc.

Coconut-based products are making roads in India and might provide tough competition to milk & fruit-based beverages in the future.

Tender coconut water is an excellent source of sugar (Glucose & Fructose), minerals including sodium, Phosphorus, potassium, calcium, and iron, and also contains significant quantities of general vitamins. Processing methods of tender coconut water include removal of water from the shell, filtration, mixing of additives packaging in pouches/Cans followed by sterilization.

Coconut milk & cream is an excellent source of fat, good quality protein & sugar. Used for the manufacturing of different food and beverages. Processing methods of coconut milk and cream include a selection of mature nuts, grinding, blanching, extraction of milk, filtration, homogenization, pasteurisation & sterilization cans, etc.

Virgin Coconut Oil is said to be the “mother of all oils” extracted from fresh coconut milk without any heat or chemical treatment. It is rich in medium-chain fatty acids, particularly lauric acid also rich in vitamin E, is non-greasy, non-staining, and is widely used in soaps, lotion, creams, and lip balms. Processing methods of virgin coconut oil include disintegration of coconut kernel, extraction of milk, and separation of oil from water using a high-speed tubular type centrifuge followed by filtration and packing.

Desiccated coconut powder, is a rich source of fat & protein. Mainly used as a substitute for grated coconut in food preparations such as curries, cakes, sweets, and chutneys. It is manufactured mainly from coconut meat obtained during the extraction of coconut milk by following vacuum/atmospheric tray drying & packaging.

Coconut Milk Powder can be used in place of fresh coconut milk for the preparation of food/beverages in households and food industries.  Processing methods of coconut milk powder included extraction of milk from the coconut, pre-heating, and homogenization followed by spray drying.

Neera, which is known as palm nectar is rich in carbohydrates, mostly sugar minerals, and salt also contains ascorbic, nicotinic acid, and riboflavin.  The processing method of neera included tapping from coconut tree, filtration followed by hot/cold processing, filling & storage in chilled condition.
