Tomato is a warm climatic vegetable that is rich in vitamin A & C besides lycopene & potassium. Tomatoes and tomato products are considered to be healthy food because of their content low fat & calories, free of cholesterol & good source of fiber and protein. Demand for tomato products such as juices, purees, paste, sauces & ketchup is increasing due to technological advantages, taste & food habits of a new generation. Water content in tomatoes varies from 90-96% while its total solid range is 5-6 %.

Processing Methods & Technology

Processing methods of tomato processing include sorting & grading, washing, peeling, sorting, thermal processing, cooling, labeling & packaging.

Tomato Juice is an intermediate product in the processing of tomato paste.  It was obtained in juice extraction stages & later converted into tomato paste. For getting tomato juice tomato breaks, removes the seeds & skin, followed by deaeration, homogenization & aseptic processing.

Tomato Paste: Tomato concentrates or paste is an important tomato product because it is a base material for many products. The paste is refined tomato pulp that is concentrated at 30-32° Brix. This paste is the base material for sauces & ketchup. For the making paste or concentres, tomato pulp is deaerated to remove dissolve oxygen, homogenised to increase viscosity & to reduce the separation of serum & heating & water evaporation of juice in kettle/evaporator to get final product concentration having 32%, followed by aseptic processing and filling for a long-life product.

Tomato Sauce & Ketchup:  Sauce is a product that is made with different vegetables, spices& vinegar. This product can be made from fresh tomatoes or tomato paste.  Ketchup/Sauce processing methods included the mixing of tomato paste with salt, sugar, vinegar, black pepper, mustard followed by heating, homogenisation & filling.

Our processing equipment includes Sorter & grader, high-efficiency washer, blancher, proper, UHT steriliser for tomato juice. For tomato puree, our Equipment includes a kettle/vacuum pan for smaller capacity & multi-effect evaporator for medium & large capacity plants beside vacuum Deaerator, homogeniser & UHT Steriliser. For tomato sauces & ketchup, our equipment includes   kettle/ vacuum pans, Deaerator, SSHE & Filling machines.

We provide a solution for the manufacturing of tomatoes & tomato-based products from the smaller capacity (Lab/ R & D Model) to commercial production of 10000 LPH.
