Vegan Ice Cream Plant of GOMA

Vegan products are plant based derivative of dairy products. These are lactose-free making it an excellent choice for individuals with dietary requirements. Moreover, they can be also used as an alternative for making sauces, smoothies, Ice cream etc. 

A vegan ice cream processing plant is very similar to a regular ice cream processing plant, but with a few key differences. The main difference is that instead of using dairy products like milk and cream, vegan ice cream uses plant-based milks and creams made from nuts, seeds, coconut, millets or soy. 

Process Overview 

Here's a general overview of the process: 

  1. Mixing: The dry ingredients, like sugars, starches, and sometimes nuts or cocoa, are carefully blended in a large vat. 

  1. Blending: Blend plant-based milk and cream with dry ingredients until smooth. Heat slightly to dissolve sugars and starches if needed.  

  1. Homogenization: Following the mixing process, homogenization is employed. This process serves to disrupt the fat globules in the mix, thereby preventing the ice cream from separating and developing an icy texture. 

  1. Aging: The mixture is subsequently aged for a period, typically overnight. This process fosters the development of flavors and facilitates the complete hydration of the ingredients. 

  1. Freezing: The matured mixture is subsequently moved to a freezing barrel, where it undergoes the process of churning and freezing. During this churning process, the air is integrated into the mixture, thereby imparting to the ice cream its characteristic smooth and scoopable texture.  

  1. Packing: The freshly made ice cream is carefully packed into containers and undergoes additional hardening in a blast freezer to lock in its delicious flavors and creamy texture. 

  1. Storage: After the ice cream is packaged, it's kept in a freezer until it's all set to be sent off to stores.
